Omakase
Chef Hilo has created a multi sensory omakase experience that blew away our expectations. We went for my partner’s birthday and did Omakase A, and as people who don’t usually spend a ton of money on restaurants this was worth the splurge for the special occasion. The matching of the background orchestral music to the different courses, the amazing flavors in each serving, the visual atmosphere itself, even the water was surprisingly an elite water (who knew that was possible), and of course Chef Hilo himself and his stories and information sharing, it all came together for a wonderful experience. I would absolutely recommend this gem to anyone.

There were a few items I’ve had at other restaurants and didn’t care much for it until I had it at Hilo. Had plenty of mouthgasms and realized I’ve never had it fresh and prepared by a chef of this caliber.
The smell of each dish was also sensational you can call that nosegasms. If the food made noise I’m sure that would have sounded like love making.
You know the feeling when you experience something new and beyond expectations? Felt like this was my first time eating seafood. I imagine this is what animals that eat kibble their whole life then taste human food feel.
My buddy was so impressed he had another omakase b immediately after the first round.
Had to charge my phone on the outlet inside the restaurant and went to pay parking meter. Was out of my chair for probably 10 seconds. My napkin was folded every time. How is she so fast with that? Probably a trained assassin.
Go in with an open mind get mind blown. Take your time savoring every bite.
Only constructive feedback from our group was wish every bite was a very different experience. All bites were different but a few bites were not different enough for one individual out of 3. Maybe this can be a request before the meal starts?
When asked about the extinction of bluefin tuna, chef replies with Japanese bluefin tuna is about to be extinct and orders from a farm raised source that is sustainable. Not exactly word for word but close enough

When it comes to Omakase, Hilo stole my heart today. I’ve indulged and have had some of the best Sushi Los Angeles has to-offer both Omakase and À la cart. But Chef Hilo took it to the next level with his artistic touch and flavors that can only be described by the experience itself. The Japanese Red Snapper, trio Oysters, Hawaiian Kahala and pretty much everything he served still has me wanting more! Even offering Sapporo on draft!!

The term “expert” is earned, and Hilo has definitely earned it. From homemade soy sauce to globally-sourced fish, Hilo’s Omakase is perhaps the best around. You’ll have cuts of fish you’ve never seen as sashimi, with unique garnishes for each. You won’t find a California roll here, nor will you be served yesterday’s fish; it’s fresh and authentic all the way. After a short interview of your likes and dislikes, Hilo will present you a custom Omakase until you’re 100% full and satisfied.
If you consider yourself a sushi connoisseur, or want to be introduced to a wider range of sushi, or have specific food allergies that make other sushi dinners challenging, Hilo is your man!

I recently had an amazing and unique lunch experience with Chef Hilo. He puts such delicate care and thought into each and every dish. The flavors are unlike any other sushi restaurants I’ve been to. This is unlike your normal sushi restaurants that just churn out many of the same recipes/dishes. The sauces are all made in house and using only high-quality ingredients starting from the fish. The variety of fish was also amazing…he served Wild Faro Island salmon, ocean trout, Hawaiian amberjack belly, pink snapper, Italian blue fin toro, East coast halibut, Albacore from Fiji, king snapper, long fin tuna from Maui and the most delicious uni from Santa Cruz. From my understanding on talking with Hilo, you’ll rarely get the same set of sushi each visit. He's constantly creating. This place is truly a hidden gem!

Well... i visit this place a week ago and had terrible experience..
First of all, lets talk about the foods..
Some of sushi are okay(not meaning good. Just okay) and most of sushi has weird smell ( I love sushi so i knew that sushi was really bad) DO NOT EXPECT GOOD QUALITY OF SUSHI AT THIS PLACE.
Second problem is their service.
Japanese cheif was really rude and impolite. When we asked for warm water, he frowned and became annoyed. We just asked for a glass of warm water.
Third problem is price.
With terrible service and these low quality food is not worth this price.
If you want waste time and money, this is best place.

A must-go omakase experience in LA! I’ve been here a few times and the menu has always changed to incorporate interesting new ingredients and dishes. I’ve had fish and ingredients here I have not had anywhere else - Chef Hilo does a lot of selective sourcing around the world and it’s a lot of fun hearing him explain where everything comes from! Never ever have I had a restaurant call me back after I was rudely told there was no reservation which was indefinitely made, only to tell me my mother didn't raise me properly. Petty and unprofessional for high level executives that dine at this establishment. Maybe if he used that energy to look and verify that a reservation was in fact made, I would not be here writing a review. I'll make sure I never dine or recommend this establishment.

Was going with my sister to her appointment at a near by office. She was hungry and wanted something light to eat, so sushi seemed like the perfect choice. Being our first time, we didn’t know there were no menus and it was the chef’s selection. I don’t know this guy, we were walking out the door and almost left, BUT, so glad we didn’t because it was amazing! Incredibly unique and delicious food, along with an entertaining education while enjoying our meal. The owners a good guy who takes a tremendous amount of pride in what he prepares for his guests. You’ll love it!

Today, Chef Hilo made special grilled and sushi Omakase. It was so good. I had Shichida Sake for pairing with food. It was a perfect match 👌 The staff is very friendly and well manner, Chef Hilo is nice and so much knowledge of food and ocean. I love to coma back here again.

One of the best omakase experiences! Great chef and staff with very high quality fish. We tried both lunch and dinner (both B courses) and we were very happy with them both. Especially for dinner omakase B, you might want to come in hungry because you will most likely be full by the end. It's almost incredible that they offer it at the price they do.

Chef Hilo is the friendliest, most passionate person you may encounter all month. The entire staff is so warm and welcoming. If you can swing it, you need to get the omakase. If you don't feel like shelling out for the full omakase, just have a conversation with the chef! I got takeout (foolishly... I wish I dined in!) and the chef walked me through the items he was most excited about. He basically put together a custom mini-omakase based on what I liked and wanted to try. As mentioned in other reviews, the highest compliment you can pay is enjoying his creations just as he conceived them, because he puts an enormous amount of thought and energy into what he serves.

Someone in a formal review described this as "not a place for introverts". As an introvert who had a great time, I would describe it as "not a place for people who take themselves seriously". It's a place for people expecting incredible attention to detail in their food but also looking to for a good time talking to chef and having an interactive meal.

Went by myself after long day when I wanted to feel taken care of. Not disappointed. Chef created curated experience that was varied, complex, original and extremely delicious. Sat at bar and had good conversation, but got lost in my book at times too. Chef is old school-no online reservations. Expensive but worth every penny.

Chef Hilo has changed sushi for me forever - I don't think I will ever be able to find sushi this great again! The flavor combinations are extraordinary, great wine selection, and even better company. The space has beautiful decor and a calm environment filled with unique items, great food, and wonderful conversation. Highly recommend, trust him, he knows how to make delicious food you will love!

Last night I had an unforgettable experience at Hilo's restaurant. The omakase was an around-the-world adventure with dishes from Fiji, Italy, Japan and more. It was insanely delicious, unique, and thrilling. Hilo was super engaged with our group - chatting with us about the food and about life.
It's an intimate place, simple and old-school. The setting suits Hilo's friendly, laid-back style.
World-class food, top-class service, without the stuffiness. I absolutely recommend it and will be back!

This place has become one of my favorite restaurants in Los Angeles. My friends and I have dined here on multiple occasions and each time has been unique and incredibly delicious. Chef Hilo's bold personality only adds to the adventure. After a little research, I landed on Hilo Sushi and I’m here to tell you it was a fantastic dining experience. One of the things I really missed during the pandemic was really really GOOD sushi omakase while sitting at a traditional tiny sushi joint. This is one of three I really wanted to try since before the shutdown. It came highly recommended by my Japanese foodie friends. Glad I was in the area and their only outdoor table was available for dinner time. Oishii desu ka!! Fresh & delicious.
Oh they house-made their sushi shoyu!! Reservation is recommended as they are really tiny. Otherwise, you can order for contactless pick up or delivery. Note: This is an traditional, old school, Japanese sushi joint. In Japan culture, Sushi is serious. Service was warm & kind. This place reminds me the unassuming, tiny sushi joints in Japan. Chef prepared today's freshest catch. Eat them the way they were prepared and presented to you. That's the non-verbal compliment you can give to the chef. Support mom & pop small restaurants!

Always such a solid meal. Eating at the Bar is a must. If you're not sure what to get, just go for the omakase!!! Reasonable prices for what you get. Traditional style, none of that fusion hipster stuff.

This place has a great lunch! For $16 you can get soup, salad and a good amount of sushi. This is the perfect lunch meeting spot if you are on a budget in Beverly Hills. The fish is fresh and although during dinner the prices are much higher I always go to lunch to get the best deal. The service is also usually very good and quick so you can be in and out in a very reasonable time during the work day.

Top shelf AUTHENTIC Japanese sushi. Fish is flown in from Japan. Don't expect crazy rolls. The chef prepares the dishes with the correct amount of seasoning, you don't add your own wasabi. They will instruct you when to use soy sauce or not. But it's all worth it because the food is amazing. What an experience.

Unreal lunch special. This is THE place to get sushi for lunch in Beverly Hills if not all of LA. Underrated and hidden gem. Expensive spot for dinner with a $150 pp Omakase but they have a $16 lunch special with multiple options. Crazy. I get the Nigiri combo every time - miso, salad 5 piece assorted sushi + 6 piece cut roll
The fish here easily rivals Sugarfish. It’s so good. Just melts in your mouth. Traditional Japanese style with warm sushi rice. I’m tired of going to sushi restaurants, even some expensive ones that serve cold rice with their rolls. Totally different experience.
Don’t come to this restaurant if you want: California rolls, spicy tuna, eel sauce, spicy mayo, tempura etc. This is traditional Japanese sushi, come for the fish.
Even the wasabi is fresh! They mash fresh wasabi root every morning, that’s not a cheap process. So if you’re surprised there isn’t an excess of wasabi on your plate that’s why. They’ll give you extra, you just have to ask.

My girlfriend needed a fork and they didn’t have one. How are kids supposed to eat if they don’t know how to use chopsticks? Chefs use hands without gloves when preparing food. Extremely rude waitress.

The best omekase experience ever! The chef was kind enough to work with my admittedly silly aversions and created a perfect selection of fresh and interesting fish. The service was perfect and the atmosphere is excellent. I already can’t wait to go back!

Very nice and simple place. All of the fish was extremely fresh and well prepared. The staff was attentive and helpful, the chefs were amazing and very talented. This restaurant is for those who really appreciate sushi for what it is, art.

Wonderful sushi, as it’s served in Japan. I like that the rice under the fish is warm, and the fish is brushed with a soy sauce glaze. Not too expensive either: My favourite is the $4 zuke marinated tuna

Good nigiri sushi selection. The $150 omakase I had was good, however, the last few courses (i.e., the abalone) was a charred on the outside, and a bit cool in the middle. The chef is quite a character. I would recommend just having nigiri sushi and save your money on the omakase. It's not worth the price. Focus instead on the nigiri selections.

We have tried pretty much every sushi restaurant in LA. Sushi sushi had been top 5 but last visit was quite disappointing. Their omakase had been excellent in past despite lack of much change, but this time, food was coming out too fast to point dishes are sitting. As a result, quality as affected. This should not happen when you are spending this much.

Incredibly amazing! Hands down THE BEST and is now MY favorite sushi restaurant in LA.
Having Sushi Sushi bookmarked for quite awhile now; co workers and I were able to clear our schedule and come in for lunch.
Sushi Sushi is located on Beverly Dr. in the city of Beverly Hills. Traffic is always heavy and parking can be a pain. Lucky for us we came right before the lunch crowd and scored a metered spot across from the restaurant. Meter accepts coins and credit cards!
The restaurant is very traditional and has that Japanese authentic feel. Warm towels were given at the beginning and end of our meal.
The premium sushi combo ($24) is the best deal on their menu and served only during lunch.
The premium sushi combo comes with a shitake mushroom miso, salad with pieces of fresh mackerel, 8 pieces of sushi and a toro cut roll. The 8 pieces are chef's choice so it changes daily. I was glad mine came with toro, sweet shrimp, and eel.
The quality of the fish was outstanding. Service was impeccable. No complaints at all.

This sushi bar is perfect for flesh fish, good taste, clean, waitresses are nice and highly educated. No colorful trashy special rolls or other stateless dishes.
One complain is little bit pricy. I come here often when I don't need to pay.

the quality and presentation of the sushi here is still one of the best in la. shige, the owner, has gotten a bit more grumpy than usual, but he seems to turn the anger inward toward better preparation of the fish. cramped and dated interior, but it is all about the fish here.
